I like to have fish at least once a week and Orange Roughy is my favorite. Hears a good and easy recipe.

Broiled Orange Roughy
(Uses less, fat , sugar, or salt.)

1 1/2 lbs. fresh or frozen orange roughy, red snapper or haddock fillets, thawed
1tsp garlic powder
1/4 cup butter melted
1/4 cup lemon juice
1/4 cup soy sauce
paprika

Place fillets in a shallow dish, sprinkle with garlic powder. Combine butter, lemon juice and soy sauce, pour over fish and turn. Marinate for 10 min. Drain and discard marinage. Place fillets on a broiler pan. Broil 3-4in. from the heat for 10 min. or until fish flakes easily with a fork, turning once. Srinkle with paprika. Serves 4

Then a Italian Spinach Salad was suggested to have with it. This all would make a dilicious meal for company and not alot of work in preparing.

Italian Spinach Salad.

1 package (6oz.) fresh baby spinach
1 gr. onion, thinly sliced
1 hard- cooked egg, chopped
3 bacon strips, cooked and crumbled
3 tbls. Italian salad dressing
2 tbls. shredded Parmesan cheese.

In a lorge salad bowl, toss spinach, onion, egg and bacon. In a microwave safe bowl, heat salad dressing on high for 30-45 seconds or until warm. Pour over the salad and toss to coat. Sprinkle with Parmesan cheese. Serve immediately. serves 4
