Quick and easy way to use up ham leftovers...

2 c. cooked ham, cut up into cubes
3 c. cooked elbow macaroni
1 can reduced fat cream of mushroom soup
1 can skim milk
1 c. reduced fat shredded cheese (cheddar or marble jack)
5 Ritz crackers, crushed

Mix all ingredients, except crackers, in baking dish. Bake at 350 for 20 minutes. Uncover and sprinkle top with crushed crackers. Bake another 10 minutes.

Just a ham version of a tuna casserole I guess. But it's good and low in fat.

I forgot to mention that you should cover the dish for the first 20 minutes. I stirred it once during baking, too.
