Brown a small onion in frypan. Add 1 1/4 c. chicken broth 1 c. salsa 1 c. regular rice Place skinless, boneless chicken pieces on top. Cover. Cook 10 min. Turn chicken over. Recover and cook 10 min more. Sprinkle with shredded cheddar and cook 5 min. Time to eat. 30 min start to finish.

I have never tried something like this. Another way to eat chicken which I don't eat enough of. Thanks Connie
