4-14.5 oz cans fat free chicken broth ( the bouillon cubes will work)
6 oz (apprx 1 cup) dry pinto beans
6 oz (apprx 1 cup) dry split peas
1 16 oz low fat sausage, smoked or reduced fat kielbasa cut in half lengthwise and then sliced.
4 medium carrots (the baby carrots already cut up work great)
3 medium celery stalks, chopped
1 large onion chopped
1 teaspoon thyme
1 14.5 oz can diced tomatoes, undrained (use only unflavored one)
Mix all ingredients, except tomatoes in a slow cooker or crock pot. Cover and cook on low heat setting at least 6 hours or until beans are tender. Remember to keep stirring.
Stir in tomatoes: cover and cook on high until heated thru about 15-20 minutes. Yields about 1 cup per serving. Servings = 8

A friend from work shared this with me. Tasted pretty good. Haven't tried making it myself yet so we will see how easy it should be.
